Pasta with Pesto Cream sauce

     Italy has cultivated a love of basil, especially in the form of pesto since I have so many delicious choices of pre-made pesto!  This is a simple pasta dish that takes little time and it comes out delicious every time because it is impossible to mess up.  You can also see that I used this recipe as an opportunity to get rid of some odds-and-ends.  Here I used farfalle and penne, but you can use whatever you have on hand.


Ingredients:
1 cup pre-made pesto
1/2 cup Heavy Cream
2 Tablespoons Butter
1/4 cup Grated Parmesan
12 ounces, weight Pasta (cavitappi, Fusili, or whatever you have on hand)
2 whole Tomatoes, Diced

Directions:
Cook pasta until al dente.

Heat cream and butter in a small saucepan over medium-low heat. Add pesto and stir.

Drain pasta and place in a serving bowl. Pour pesto cream over the top. Toss to combine. Fold in diced tomatoes.
