Creamy Tomato Soup

 There is nothing like a homemade tomato soup.  Real chunks of tomatoes floating around instead of just processed junk.  I found this recipe for creamy tomato soup and I am addicted.  This with a delicious grilled cheese (with real shredded cheddar) could make my day.  It takes some time, but it is totally worth it.  This recipe also makes a large batch, so you can easily freeze portions to just reheat later!



Ingredients:
3 Tb. olive oil
1 onion, diced
4 cloves garlic, minced
4 cups vegetable broth
1 cup water
1 (28-ounce) can crushed tomatoes
1 (14.5 ounces) can diced tomatoes, drained
2  fresh tomatoes, diced
1 1/2 cup heavy cream
salt and pepper

Directions:
Add the olive oil to a large pot.  Add the diced onions and heat while stirring until the onion begins to soften, about 5 five minutes.  Add the minced garlic and heat for an additional 3 minutes.  Season with salt and pepper.

Add the broth, water, crushed tomatoes, diced tomatoes.  Once the soup begins to bubble, add the fresh diced tomatoes and heavy cream.  If the soup is too chunky for your taste, just add some more water.

Let the soup simmer for 40 minutes.  You can top this with some shredded cheddar cheese.  Serve with an amazing grilled cheese!
