Parmesan gnocchi.

     I think that I had never had gnocchi before visiting Italy.  I know it is available in the States, but its not as popular as it should be because it is amazing!  Gnocchi are soft potato dumplings and they act just like pasta--boil them in water for a few minutes and throw them in a pasta sauce.  This recipe is super easy and delicious!





Ingredients:
1 lb. gnocchi
2 garlic cloves minced
2 Tb. olive oil or butter
3/4 cup - 1 cup shredded Parmigiano-Reggiano (the good kind of Parmesan)
1/2 cup pasta water (from draining the gnocchi)

Directions:
Set a large pot of salted water to boiling.  Once the water begins to boil, add the gnocchi.  Once the gnocchi begin to float to the top of the water, it should be done.

While waiting for the water to boil, mince garlic.  Add oil and minced garlic to a pan on low heat.

In the sink, set a bowl underneath of a colander and drain the pasta (making sure that some of the pasta water is reserved in the bowl).  Then add the gnocchi, pasta water, and Parmesan cheese to the pan with garlic.

Let the cheese melt and reduce for a few minutes.  Season it with a little pepper.  Done!
